  • Seasonal sauteed vegetable salad, burrata, pesto, almonds, cottage cheese and quince.
  • Veal sweetbreads, confit of wild mushrooms, low-temperature cooked egg, caramelized onion and white Italian truffle oil.

We continue with…

  • Fire-grilled wild tuna, chanterelle mushrooms and pickled vegetables.

  • Selected Amaren T-bone Ox steak, aged minimum 5 years, approx dry-aged 70 days,
  • Coal-roasted Navarra peppers with rustic potatoes (1.6kg/3.5 lbs for 4 people)

  • Caramelized Spanish style French toast stuffed with a fig cream and a rice pudding ice-cream.
