The mucous membranes are pinkish, the hooves and horns are small and light coloured, the conformation is generally long and
deep, with the ample width of animals specialised in meat production. Fat is generated not intramuscularly but on the outside of the back, protecting it from oxygen. Thanks to this protection, the Rubia Gallega is probably the best breed for long maturation. Meat that enjoys great elegance and intense flavours and
deep flavours. It is a docile breed, easy to handle, characterised by its gentleness and also by its longevity, with an average age of 21 years.
